The ice slurry

It is a simple fact that the better you care for your catch, the better it will taste on the plate.
It upsets me when I see high-quality eating fish left on a deck to dry in the sun, only to be thrown out at the end of a day’s fishing.
If you plan to take a fish, then you may as well treat it with respect and look after it as best as you can.
In a perfect world every fish destined for the table would be bled immediately upon capture (techniques for bleeding vary in different species) and then placed straight into an ice slurry.
Even fish with very little blood such as whiting and flathead taste better when bled.
A slurry is a simple mix of ice and saltwater that will chill your fish instantly and preserve the flesh in a perfect state ready for filleting or cleaning.
Getting your ice/saltwater ratios right is all about trial and error, but it shouldn’t take you long to master the art.
Take two fish. Bleed one and put it the ice slurry. Just throw the other in a fish bin. When you get home eat them both.
I bet you will be blown away by the difference it makes to the eating qualities.
So next time you hit the water, make sure you have a few bags of ice and a good tub with you.
